Here are a few suggestions\nfrom my most recent&nbsp; trip.<\/p>\n\n\n\n<p><strong>CATCH THIS GREAT\u00a0 MEAL:\u00a0 <\/strong>Last fall, the Aria Resort &amp; Casino (<a href=\"https:\/\/www.aria.com\/en.html\">https:\/\/www.aria.com\/en.html<\/a>) welcomed Catch (<a href=\"https:\/\/catchrestaurants.com\">https:\/\/catchrestaurants.com<\/a>),the go-to dining destination for celebrities from Los Angeles to New York City. The entryway is a truly picturesque 80-foot-long tunnel, filled\nwith brightly colored flowers organized into beautiful patterns. Guests can dive in with an assortment of bright appetizers. The\nCatch Ceviche infuses the bold flavors of mango and blood orange ponzu with\nAlaskan King Crab, Maine Lobster, shrimp, and scallops. We enjoyed the decadent\nTruffle Sashimi allows guests to indulge in both tuna and hamachi paired with\nchili ponzu, caviar, and rich black truffle pur\u00e9e. <\/p>\n\n\n\n<p>In\naddition to their Vegas-specific sushi rolls, Catch also offers its famed\nsignatures. The vegan Veggie King Roll is made with king oyster mushrooms,\ncashew and spicy miso. For a unique and delicious flavor profile, guests can\nopt for the Hellfire Roll, which uses spicy tuna in two ways with Asian pear\nand balsamic. <\/p>\n\n\n\n<p>We\nalso enjoyed other shared starters, including the crispy shrimp, the rice\ncakes, and an order of their mushroom spaghetti, which was truly delicious. For\nour main course: roasted branzino, a restaurant highlight, alongside a side of\nspaghetti squash. Prefer meat? Catch offers options like the 25-Day Dry-Aged\nTomahawk: 36-ounces of all natural, grass-fed beef with caramelized onion wagyu\nbutter.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img loading=\"lazy\" decoding=\"async\" width=\"4032\" height=\"3024\" src=\"https:\/\/i0.wp.com\/sandboxworld.com\/travel\/wp-content\/uploads\/2019\/01\/Oven-Roasted-Whole-Branzino.jpg?fit=648%2C486\" alt=\"\" class=\"wp-image-3266\" srcset=\"https:\/\/sandboxworld.com\/travel\/wp-content\/uploads\/2019\/01\/Oven-Roasted-Whole-Branzino.jpg 4032w, https:\/\/sandboxworld.com\/travel\/wp-content\/uploads\/2019\/01\/Oven-Roasted-Whole-Branzino-300x225.jpg 300w, https:\/\/sandboxworld.com\/travel\/wp-content\/uploads\/2019\/01\/Oven-Roasted-Whole-Branzino-768x576.jpg 768w, https:\/\/sandboxworld.com\/travel\/wp-content\/uploads\/2019\/01\/Oven-Roasted-Whole-Branzino-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 4032px) 100vw, 4032px\" \/><\/figure><\/div>\n\n\n\n<p>Their over-the-top desserts\ncelebrate indulgence, featuring treats like the <strong>\u201c<\/strong>Hit Me\u201d Chocolate Cake that encourages guests to smash the liquid\n\u201cKlondike\u201d bar perched atop a brownie, devil\u2019s food cake, and roasted white\nchocolate ice cream. <\/p>\n\n\n\n<p>New York based restauranteurs <strong>Eugene Remm<\/strong>&nbsp;and&nbsp;<strong>Mark Birnbaum<\/strong> have\nspent two decades building Catch Hospitality Group into one of the country\u2019s\nmost successful restaurant and nightlife management companies.&nbsp;Dubbed by <em>Forbes <\/em>Magazine as the\n\u201cNew Kings of New York Hospitality,\u201d <strong>Remm<\/strong> and <strong>Birnbaum <\/strong>pioneered dynamic hospitality\nexperiences using food, service, and vibe to create seamless transitions\nbetween dining, nightlife, and entertainment.<\/p>\n\n\n\n<p>\u201cAfter successfully\ntackling the East and West Coast markets we feel that Las Vegas is the next\nmost logical place for the CATCH&nbsp;brand to call home,&#8221; Birnbaum told\nFood &amp; Wine.&nbsp;&#8220;As with all CATCH outposts, we will stay true to\nthe identity of the brand in both design and core menu, while working to\ndevelop location-specific additions that speak to the interests in the local\nmarket and its anticipated clientele. In addition to trying one of their delicious cuts of American\nwagyu, complete with white truffles, we also indulged in their smoked salmon\npizza with caviar, a true highlight on their menu. We enjoyed a fresh\nstrawberry cocktail as we sat on the patio enjoying the fountains, along with a\ndessert that I can only describe as outstanding: their Spiked Lemon. Words\ncannot do this desert any justice, but you need only take to the internet to\nsee it for yourself, as our waiter described as their menu\u2019s \u201cMost Hash tagged\nItem\u201d due to its astonishing appearance, complete with flakes of gold. <\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img loading=\"lazy\" decoding=\"async\" width=\"602\" height=\"401\" src=\"http:\/\/sandboxworld.com\/travel\/wp-content\/uploads\/2019\/01\/Park-MGM-Juniper-Cocktail-Lounge-Craig-Schoettler.jpg\" alt=\"\" class=\"wp-image-3265\" srcset=\"https:\/\/sandboxworld.com\/travel\/wp-content\/uploads\/2019\/01\/Park-MGM-Juniper-Cocktail-Lounge-Craig-Schoettler.jpg 602w, https:\/\/sandboxworld.com\/travel\/wp-content\/uploads\/2019\/01\/Park-MGM-Juniper-Cocktail-Lounge-Craig-Schoettler-300x200.jpg 300w\" sizes=\"auto, (max-width: 602px) 100vw, 602px\" \/><\/figure><\/div>\n\n\n\n<p>Similar to the menu, the wine list will be seasonally\ninspired, starting the summer months with a strong selection of Ros\u00e9\nwines. In addition, the list features nearly one dozen wines from\nWolfgang Puck\u2019s private label, a collection of food-friendly wines that\ncelebrate the spirit of food and life for which the chef is known. <\/p>\n\n\n\n<p>Spago commissioned Las Vegas artist Katie Lewis to create a series of 20 topographical map images inspired by the Nevada desert landscape. One wall of the restaurant is dedicated to \u201cHugging a Black Hole, Hoping One Day to Forget,\u201d a piece crafted by Jacob Hashimoto, known for his three-dimensional wall hangings inspired by his Japanese heritage. The most coveted seats are positioned on the circular and covered outdoor patio, giving guests unobstructed front-row views to the magnificent fountains.<\/p>\n\n\n\n<p>Gelila\nPuck said, \u201cThe fountains were everything for us. We used the water as a key\nelement in the design of the restaurant, bringing the beautiful feature to the forefront\nof the dining experience from the moment our guests enter the restaurant.\nFloor-to-ceiling glass windows highlight the grandeur of the space while\ndistinct dining spaces meld classic architecture with modern art, all creating\nan atmosphere as memorable as the food.\u201d<\/p>\n\n\n\n<p>As for the main dining room<em>, <\/em>this\nspace boasts beautiful floor-to-ceiling windows imparting picturesque views of\nthe Bellagio\u2019s\nfamed lake from any seat in the house. Spago also offers two private\nfountain-view dining rooms, each seating up to 20 guests. The private rooms\nfeature translucent glass panels with elegant white sheers that act as filters,\nallowing guests to enjoy their privacy while being able to fully take in their\nsurroundings. <\/p>\n\n\n\n<p>Spago is located in Via Bellagio and\nis open for lunch daily from 11:30 a.m. \u2013 2:45 p.m. Dinner is from 5 p.m. \u2013\n10:30 p.m Sunday \u2013 Thursday and 5 p.m. &#8211; 11 p.m. Friday &amp; Saturday. As famous as Las Vegas itself, this spot is perhaps the best-known casino resort in the world. During our trip, we\nexperienced a fantastic dinner at their Bacchanal Buffet\u2014voted the Best Buffet\nin Las Vegas by USA Today two years in a row. With nearly 500 dishes to choose from, every guest is\nsure to satisfy their cravings, whether they are in the mood for prime rib,\nchilled king crab legs, or freshly made sushi.
